Many Dalmatians prefer to have some outdoor activities in this time of the year, and it is not because of their summer body, it is because they are spending days in nature, searching around to pick some of the best asparagus. The most popular way of preparing asparagus in Dalmatia is in a way of frittata, but also as a soup. In addition to being full of vitamins and minerals, these green fleshy stalks are low in calories and are also called body cleansers. So try our healthy asparagus and spinach soup recipe.
400 g asparagus
200 g spinach
2 smaller potatoes
1 larger head of silver onion
2 cloves garlic
3 tablespoons olive oil
500 ml of vegetable stock
salt and pepper
50 g of bacon
On a warm olive oil first add finely chopped onion, when it becomes glassy add finely chopped garlic. Fry briefly. Once they start to get golden add diced potatoes and simmer briefly.
Pour vegetable stock over the ingredients and cook for 15-20 minutes.
Add smaller pieces of sliced asparagus and continue to cook everything for about 10 minutes. Finally add the spinach and cook briefly. Season with pepper and salt. After 10 minutes turn off the heat and leave the pan for a few minutes to cool down a little bit. Mix the soup with a stick mixer. Cut the bacon into smaller pieces, fry it in a pan and add to the soup when serving.
This soup can also be served cold, it all depends on how you prefer it. With your delicious soup you can also serve a few asparagus wrapped with cooked ham and briefly fried.
