In the summertime in Dalmatia you can find 2 types of people, the first one is the one who loves everything and everyone. The other one is grumpy and since mid-August they can no longer stand the summer heat, they continue to live in anticipation of Autumn. The first group is called Furešte (tourists), and the second is called Dalmatians (locals).
And then… in the middle of September when the smell of Autumn starts to spread all over the area, the grumpiness finally disappears. Now that we are all happy, we can start with the most important thing during the Autumn in Dalmatia - preparing for winter. So, while some picked olives and prepared olive oil, others planted onions and lettuce, in the history of our family, Grandpa always mashed grapes and equipped himself with barrels of wine, while Grandma was a bit more romantic. While walking in the fields, she would enjoy the smell of mandarins and she wanted that scent to last forever - that's why she always took us to diligently pick mandarins from which she would prepare the most delicious jam that we all enjoy. Now is the time to spread the word and give You the possibility to taste the most delicious jam ever..

2 kg mandarins
5 cups sugar
6 cups water
3 tablespoons lemon juice
Peel the mandarins, grate it and squeeze the juice. Remove the white parts and all the threads from the skin and cut each part in half. Clean the seeds. Take gauze and put pits and cuticles in it. Put water in a large bowl, heat it and add peeled mandarins, sugar, lemon juice and gauze containing seeds and zest. Stir until sugar is dissolved. Increase the flame until everything boils. Reduce the heat and cook over low heat for about an hour, without the lid. Stir gently sometimes. Extinguish the flame and leave the jam to cool for 10 minutes. Take the pitted gauze and crust out. Pour the mixture into jars, wait for it to cool and close it well.
You can use mandarin jam in a variety of ways; you can add a tablespoon of jam to your morning cereals, yogurt, cakes or to a salad dressing. You can also use it as a filling for pancakes or donuts.
