In Dalmatia cheese making culture has existed since always, so we found a way to save a few pennies on Mascarpone too.. And it’s always more fun when you roll up your sleeves and get to work yourself. Give yourself one task this week: make homemade mascarpone cheese!
Trust us, it’s simpler than you think, and you’ll have homemade cream cheese that you can use for any savory and sweet dishes. It is perfect for morning cereals, smoothies, ice cream, as a filling in homemade ravioli or with a little honey and fresh fruit. You’ll never have to set aside pretty large amounts of money for this cheese again, and you’ll want to make a cheesecake
2 cups full-fat sweet cream
1 tablespoon lemon juice
Heat the sweet cream in a pan over low heat. Use a thermometer to monitor that the temperature reaches a maximum of 82 degrees Celsius. Let the sweet cream simmer at that temperature for about 3 minutes, then add lemon juice and simmer for another 3 minutes. Remove from heat and allow mixture to cool to room temperature. Coat the strainer with 3 layers of gauze and place the bowl under the strainer. Pour the cooled mascarpone mixture over the gauze and put everything in the fridge overnight to drain all the liquid. You're done!
