This cake does not need much introduction, we are talking about the Splitska torta, the one for which when you try it you will hardly find a replacement. In the video below you can see what the whole preparation looks like, and here I leave you my Grandma’s recipe.
Biscuit:
150 grams of chopped figs
150 grams of chopped almonds
10 grams of vanilla sugar
3- 5 tablespoons all purpose flour
9 egg whites a bit of salt
9 tablespoons sugar
2 tablespoons rum
you can also use raisins & walnuts
Cream:
9 egg yolks
9 tablespoons powdered sugar
7 tablespoons density
0.5 liters of milk
250 grams of butter
Separate the egg yolks from the egg whites. You can put the egg whites back in the fridge because we make the cream (filling) first. Add vanilla sugar and powdered sugar to the egg yolks, mix everything until you get a smooth mixture. Pour the mixture into preheated milk. After about 15 minutes of constant mixing, your cream should be thick enough and therefore ready. Leave the cream to cool and when it is cold enough, mix 250 grams of butter into it and put it in the fridge.
While our cream cools, we will make a biscuit. First mix the chopped almonds, chopped dried figs and all-purpose flour, and set aside. Then mix the egg whites into a solid snow foam, and slowly add the sugar, little by little. Once you have mixed the sugar into the egg whites, you can add a pre-mix of almonds, figs and flour to them. Stir until the ingredients combine nicely.
Coat the pan with coconut or any other oil and place on baking paper. According to tradition, the Split cake is made in a square shape, so all you need to do now is pour the mix in the pan and make it all smooth and even. Put it in the preheated oven at 180 degrees Celsius for about 25 minutes. Once Your biscuit is done it should be golden-brownish color, coat it with rum, divide it into three equal parts, cut it out and only then separate the baking paper. This will make it easier for you to separate the paper.
After that all you have left is to coat and decorate the cake. Play and be creative. Leave the cake in the fridge for a minimum of 2 hours and then enjoy the flavors of Dalmatia.
